Something Fun to Do this Weekend

If you have a bit of time on your hands this weekend, here’s a really yummy Indian dessert recipe to try. Betty Kochamma made it for us over our Christmas holiday. We called it "Indian Flan," which made Kochamma laugh, and we loved it so much that we licked the bowl clean. She was sweet enough to make it for us again the next night.

For this "Indian flan" you will need:
1 ½ liters of milk,
1 can (about 400 grams) of condensed milk
10 grams of China grass (or plain gelatin if China grass is not available)
1 ½ cups of sugar
A handful of cashews, broken into small pieces
A handful of coconut, fresh if possible
Another cup of sugar.

Now, here’s what you do: Boil the milk, then allow it to cool. Break the China grass into small pieces, and boil in a little bit of water until it melts. Add the condensed milk to the boiled milk. Keep the mixture on the fire and stir. Add the China grass solution and continue to stir for about 2 or 3 minutes. Add the first cup and a half of sugar. Pour the mixture into a dish, and let it cool in the fridge. It is ready when it is about the consistency of jello. While the Indian flan is cooling in the fridge, make the topping. Take the cashews, coconut, and last cup of sugar, and caramelize the mixture together. Continue stirring the entire time it is cooking. You’ll know it is finished when it has turned brown. Just before serving, sprinkle the topping on the flan. Serve and enjoy!
